Loi Suites Iguazú introduces a refreshed gastronomy proposal enriched with regional flavors.
Located within the breathtaking Reserva Natural Selva Iryapú, Loi Suites Iguazú has unveiled a new culinary experience at its Naipí restaurant. This revitalized experience brings guests a winter menu that elegantly melds traditional recipes, local ingredients, and gourmet cuisine to create an immersive journey through the culinary identity of Misiones.
Gastronomy has increasingly become a pivotal aspect of experience tourism. In recognition of this, Loi Suites Iguazú made a decisive move by refreshing its restaurant’s offerings starting in July. Situated just minutes away from the Iguazú Falls, the hotel aims to connect visitors with regional culture through its innovative food offerings, thereby complementing their lodging experience.
What does the new Naipí menu offer?
Inspired by Missionary gastronomic traditions, the menu combines indigenous ingredients with contemporary culinary techniques to reinterpret the region’s emblematic recipes. This concept aligns with a rising international tourism trend where cuisine transforms from a mere complementary service into a key reason for travel and a way to understand a destination’s history and identity.
The culinary proposal draws from the gastronomic memory of the province, incorporating representative products to convey the cultural history of the Litoral. Some standout dishes include a modernized version of the traditional vori vori, using mousseline de ave and tuil de chipa. This contemporary twist retains the essence of one of the region’s most iconic preparations.
Other classics feature innovative interpretations, such as the chipa guazú LOI. Noteworthy starters include tartar de surubí marinated in leche de tigre with jaboticaba emulsion and carpaccio de langostinos and surubí with pitanga gel and yacaratiá nectar, where river fish are paired with native Misiones fruits.
River fish hold a central place
The menu celebrates one of the great gastronomic heritages of northeast Argentina: river fish. Key dishes highlight pacú cooked en papillote with regional tubers, focusing on mandioca and ñame. There’s also grilled surubí paired with kivevé and roasted vegetables, which emphasize the richness of local ingredients.
The gastronomic journey concludes with desserts featuring flavors native to the province, such as yacaratiá and passion fruit. A classic île flottante with baked meringue and English cream is also incorporated into the signature menu.
Hernán Ariel Díaz: the chef driving the proposal
At the heart of the new menu is Hernán Ariel Díaz, executive chef at Loi Suites Iguazú. Born in Eldorado and professionally trained in Misiones, Díaz honed his skills at various local establishments, eventually solidifying his expertise in Puerto Iguazú, deepening his knowledge of regional products and local cuisine.
His culinary philosophy revolves around respect for raw materials, the appreciation of indigenous ingredients, and the creation of a unique culinary identity. Díaz expressed that the goal of the new menu is to “rendir homenaje a la gastronomía misionera, tomando recetas y sabores que forman parte de nuestra historia y reinterpretándolos con técnicas actuales.” He also remarked that “la cocina también cuenta historias,” hoping each dish enables guests to connect with the culture and rich gastronomy of Misiones.

The gastronomic renewal aligns with Loi Suites Iguazú’s positioning as a leading hotel within the nature and wellness tourism sector.
